This Gold caviar is highly popular at some of the world’s finest restaurants due to its beautiful golden color and mild yet complex flavor.
By crossing two sturgeon species, Huso Dauricus and Acipenser Schrenkii, a fully golden caviar with large eggs is produced. The Gold caviar is cultivated near Lake Quindao in eastern China, by the producer Kaluga Queen.
Kaluga Queen is one of the world’s largest caviar producers, and all their sturgeon farming takes place in the lake itself, not in enclosed recirculated systems as seen with much of modern aquaculture. Kaluga Queen offers a wide range of quality products, and for this selection, we choose only the best.
The hybrid sturgeon typically weighs between 25-50 kg at slaughter, and the caviar is lightly salted and aged for 12 weeks. The taste is mild, lightly salted, and rounded, with a firm texture that offers a delicate pop when the eggs burst.
The sturgeon is 7-8 years old at slaughter, with roe size ranging from 3-3.3 mm. The flavor is mild, slightly salted, and round, with a completely golden color.
